Mujadara with Garlic-Lemon Yogurt - Delicious!





 
I found this recipe on the Earth Balance Made Just Right website and it is delicious!

Really, this recipe only takes about 40 minutes start to finish.

(Makes 4 to 6 servings)

Ingredients:
6 medium sized onions, sliced
2 tablespoons butter or Earth Balance
1/4 cups white wine (I was out of white wine so I substituted apple cider vinegar)
1/2 cup brown or green lentils
1 1/2 cups brown rice
1 cinnamon stick
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
Salt and Pepper to taste
1 cup plain yogurt
3 cloves garlic, minced or crushed
juice of 1/2 lemon
1/2 teaspoon dried corriander

Melt the butter and oil and 1 tsp salt in large skillet and add the onions.  Set to medium heat stirring occasionally until very soft and brown (about 30 minutes).

While the onions are cooking, combine the rice, lentils and cinnamon stick in a pot.  Add four cups of liquid (water, broth or a combination of the two).  Bring to a boil, reduce heat to simmer and cover. (about 30 minutes) ~ The onions and rice/lentil mixture will finish just about the same time. 

Make the sauce:  Combine the yogurt, garlic, lemon juice and dried coriander in a bowl.  Cover and refrigerate until you are ready to serve.

De-glaze the onion pan with the wine by adding it to the onions and stirring until all the brown bits stuck to the bottom of the pan combine with the liquid to make a sauce. (this doesn't take long).

Remove the cinnamon stick from the rice/lentil mixture. Add about half the onions, the ground cinnamon and the ground cumin into the rice/lentil mixture and stir to combine.  Add salt and pepper to taste.

Serve:  Spoon out the rice and lentils onto a plate or into a bowl, top with a bit of the reserved onions and spoon some of the yogurt sauce on top or on the side. 

Delicious and an amazing comfort dish on a fall day.  Filled with goodness and nice warm spices.
